Can you eat the tops of beets?
Just wondering, as it seems like a nice leafy part that goes to waste. Just wondering if it's edible.

To answer your question in shorthand; yes, you can eat beet tops. Crosby Egyptian beets are actually grown for their tops!

Baby beetroot leaves are great in a salad and the larger ones are perfect to steam like spinach. They are very nutritious and delicious too
